Sausage pasta

Ingredients:

6 sausages

½ a white onion

1 tin of chopped tomatoes

1 tablespoon of dried oregano

250g pasta

Method:

  1. Remove the sausage casing and mince into a pan on a medium heat with a drizzle of oil

  2. Whilst the sausage is cooking dice the half onion

  3. Once the sausage meat is 80% cooked add the diced onion

  4. Once the sausage meat is cooked and onions have softened add the tin of tomatoes and oregano

  5. Simmer for 10 minutes while the pasta cooks

  6. Once cooked drain the pasta and serve

Tips:

  • I like to use the Sainsburys taste the difference chorizo style sausages for their slightly spicy, smoked flavour. They have a soft casing which tears easily so I don’t bother removing before mincing the meat.

  • This recipe is very easy to tinker with and adapt to personal taste, you could try adding different vegetables and making it more like a bolognese sauce with carrot, or mushrooms. Or you could focus on the tomato base and add fresh tomatoes or basil.

  • I normally serve this pasta with Parmesan finely grated over the top but have also tried it as a pasta bake with bubbling Mozzarella sliced and then grilled.
